Doughnuts
Ingredients :
1. 2 1/4 tsp dry yeast, 7g
2. 1/4 cup water, 60 ml
3. 3 tbsp granulated sugar, 36 g
4. 4 1/2 cups flour, 585 g
5. 1 pinch of salt, 2g
6. 1 cup milk, 220 ml
7. 2 eggs
8. 6 tbsp butter, 86 g
9. 1 tsp vanilla extract
For the Top :
1. 3 tbsp granulated sugar
2. 1 tbsp cinnamon,
For the filling :
1. Hazelnut Chocolate Cream or amul chocolate melted.
Method :
1. In a bowl, whisk together the warm water, yeast, and 1 tsp of the granulated sugar and let it rest for 5-7 min.
2. In a large bowl take the flour, milk, remaining sugar, salt, eggs, vanilla, and foamed yeast.
3. Mix them until combined for about 3-4 minutes. Then, cover it with a clean kitchen cloth or plastic wrap and let it rest at room temperature for 10-12 minutes.
4. After 10-12 minutes knead the dough by hand or stand mixer.
5. Add room-temperature butter to the dough and continue to knead for 12-15 minutes. The dough will be a little bit sticky at this point, but no need to worry.
6. This gives a perfect texture to the doughnut. If it is too sticky, then you can add a little bit more flour. Also, the better you knead, if using a stand mixer gives the best results.
7. Cover it with a plastic wrap and let it rest at room temperature for 30-45 min until double in size. Then place it in the refrigerator and let it rest for 2-3 hours. Or you can keep the dough in the refrigerator overnight without resting it at room temperature.
8. Place the dough onto a floured work surface and divide it into two equal pieces. Roll each piece to 1/2-inch thick using a rolling pin.
9. Using a cookie cutter cut the dough into mini circles.
10. Place these pieces on a parchment-lined baking tray. Cover with a clean kitchen towel and let it rest again at room temperature for about 30-45 min
11. Heat the oil to 350F. Fry both sides until golden brown. Remove the doughnuts from the oil on a paper towel.
12. Dip them into the sugar and cinnamon mixture, then using a pastry bag fill them with the hazelnut chocolate cream/ melted Amul chocolate. Or you can decorate according to your taste.
This is one of the best and easy mini doughnuts/donuts recipe. With the help of yeast, you can make fluffy, tasty and fried donut at home with the use of donut maker.
