litchi pudding 🍮

Ingredients
1. Chopped Litchis 1-1/2 cup,
2. Pomegranate 50 gm,
3. Fresh cream 200 gm,
4. Gelatin 1 tbsp,
5. Custard powder 3 tbsp,
6. Milk 450 ml,
7. Milkmaid 1/2 tin (200gm).
Preparation
1. Mix custard powder in milk, and bring to a boil till pourable. Keep the custard aside to cool down.
2. Soak gelatin in 2 tbsp warm water, leave for a while and then mix gelatin, Milkmaid and custard while it's warm (custard should be warm enough to add). Mix properly and allow it to cool.
3. In another bowl whisk fresh cream, chop the Litchis and add to the custard using the cut-and-fold method. Do not over-mix. Then pour this in a glands bowl and keep it in the fridge till it is set. Decorate with chopped Litchis and pomegranates. Serve with love.
