    Mix  Vegetable Soup

Ingredients: 


20gms (0.70 oz) carrot; 


20gms (0.70 oz) bottle 

gourd; 

20gm (0.70 oz) onion; 


20gms (0.70 oz) cucumber; 


20gms (0.70 oz) tomato; 


20gms (0.70 oz) baby corn: 


20gms (0.70 oz) cabbage: 


20gms (0.70 oz) raw papaya 


20gms (0.70oz)knol kohl (kohlrabi); 


20gms (0.70oz)mushroom; 


1tsp oil; 


1tsp cumin seeds and mustard seeds mixed; 


salt as per taste; 


a pinch of black pepper powder; 


20gms (0.70oz)lemon juice; 


20gms (0.70oz)chopped coriander leaves, 


20gmns (0.70oz)chopped onion.


Method: 


1. Wash, chop and boil all the vegetables, and add salt. 

2. Once vegetables are cooked, grind them with sufficient water except for mushrooms. 

3. Now strain. Keep the strained water and the pulp aside. 

4. Heat oil and adds the cumin and mustard seeds. When it splutters, put the chopped onion. Fry for sometime 

5. Now pour the strained water and boil it further. Add the pepper powder. 

When done garnish with coriander leaves, mushroom and some lemon juice. Serve hot.


Importance: This soup is a good source of proteins, vitamins and minerals and also a good appetizer.
