1. Cucumber salad. 





Ingredients : 


1. Cucumber (grated )1 cup,

2. Curd 1/2 cup,

3.  Finely chopped coriander 1 tbsp,

4. Finely chopped green chillies       1/4tsp,

5. Sugar 1/4tsp (optional),

6. Oil 1/2 tsp,

7. Mustard seeds 1/4 tsp.


Preparation :


1. Take a big bowl and add curd to it, whisk curd, salt and sugar together so the sugar dissolves in it. 

 2. Clean and peel the cucumber, grate with the grater and mix into a curd. Give a good mix and keep aside. 

3. In a frying pan add oil, when the oil is hot add mustard seeds. when the mustard seeds start popping turn off the flame and let the oil cools down.

4. Add oil to the curd and cucumber mixture when it's completely cooled down. 

5. Served as a side dish with lunch/dinner. or can be eaten as a one-dish salad for weight loss.

   


2. cucumber salad without curd.




Ingredient :


1. Grated cucumber 1 cup,

2. Finely chopped tomatoes 1/2 cup, 

3. Rock salt/ pink salt as per taste,

4. Peanut powder (coarsely ground) 1 and 1/2 tbsp

5. sugar (optional),

6. Pinch of asafoetida,

7. Green chillies 1/2 tsp,

8. Mustard seeds 1/2 tsp, 

9. Chopped coriander 2tsp.


preparation :


1. Clean and peel the cucumber, grate with the grater and keep in a bowl and add finely chopped tomatoes, salt and peanut powder.

2. Preheat the oil in a pan, add mustard seed wait till seeds pop completely and add asafoetida to the oil and turn off the flam. 

3. Once the oil is cooled down add it to the cucumber mixture. 

4. Garnish with coriander and serve with the main course or eat for weight loss.



3. Cucumber pineapple salad.





Ingredient :


1. Diced cucumber 1/2 cup,

2. Diced pineapple 1/4 cup,

3. Chopped tomato 1/4 cup,

4. Lettuce leaves, 

5. Diced bell paper 1/4 cup, 

6. Boiled sweet corn kernels 1/4 cup, 

7. Salt, 

8. Black paper, 

9. Oregano, 

10. Lemon juice 1tbsp,

11. Olive oil 1ts, 

12. Honey 1/4 tsp ( optional)


preparation :


1. Clean and dice the cucumber, pineapple, bell pepper and tomatoes. Keep it in a big bowl 

2. Add sweet corn kernels, salt, oregano and black paper and give a toss. 

3. Now add lemon juice, honey and olive oil and mix it well. 

4. Finally add lettuce leaves and serve.

4. Cucumber-sprout salad.




Ingredient :

 

1. Cucumber 1 cup, 

2. Green gram sprouts 1 cup, 

3. Finely chopped onions 

4. Chopped tomatoes 1/2 cup 

5. Finely chopped coriander 2tbsp,

6. Peanut powder 1/4cup,

7. Curd 1/4 cup, 

8. Salt, 

9. Chat masala 1tsp,

10. Dry mango powder 1/2 tsp, 

11. Black paper powder 1/4 tsp. 


preparation :


1. soak green gram all night, take it out and cover it in a cloth for a day for sprouting. 

2. Keep 2 glasses of water in a saucepan to boil, add green gram sprouts and salt 1/2 tsp to it. Let it cook. 

3. Roast the peanuts grind them in a grinder and keep it aside. 

4. Peel and finely chop the cucumber, add chopped tomatoes, coriander and salt, and keep it in a bowl. 

5. Once the sprout cools down add it to the cucumber along with black paper,  chat masala and dry mango powder. Give a good mix. 

6. At last add curd and peanut powder to the salad and serve. 




5. Cucumber mix salad.



Ingredient :


1. Grated carrot 1/4 cup, 

2. Grated Beetroot 1/4 cup, 

3. Finely chopped onion 1/4 cup, 

4. Finely chopped cucumber 1/2 cup

5. Lemon 1,

6. Olive oil 1tsp(optional)

7. Salt as per taste, 

8. Oregano 1/2 tsp, 

9. Chilli flakes 1/4 tsp, 

10. Cream cheese 1tbsp,


Preparation :


1. In a bowl take a cucumber, grated carrot and beetroot and add onion to it. 

2. Add salt, oregano,  chilli flakes and olive oil and mix well. And then add lemon juice. 

3. Finally add cream cheese and the salad is ready. 



6. Corn cucumber salad.



Ingredient :


1. Boiled sweet corn kernels 1cup,

2. Finely chopped cucumber 1 cup, 

3. Chopped coriander 2 tbsp,

4. Finely chopped onion 1/4 cup, 

5. Pomegranate 1/2 cup, 

6. Curd 1/4 cup, 

7. Sugar 1/2 tsp, (optional)

8. Chat masala 1/4 tsp, 

9. Salt. 


Preparation :


1. Boil the sweet corn and keep it ready. 

2. Take finely chopped cucumber and onion in a bowl, and add clean pomegranate and salt to it. Give a good mix.

3. Add curd and sugar to the salad. Garnish with coriander and chat masala.

7. paneer cucumber salad.



Ingredient :


1. Grated cucumber 1 cup, 

2. Panner/tofu 1/2 cup, 

3. Mayonnaise 1/4 cup, 

4. Onion thin slices 1/4 cup, 

5. Boiled  potato cut into small cubes 1/4 cup, 

6. Oregano, 

7. Salt, 

8. Black paper, 

9. Grated cheddar cheese. 


preparation :


1. Keep diced paneer in mayonnaise and a pinch of salt for 10 minutes. 

2. In a bowl take a grated cucumber, onion slices, black paper and salt and mix it well. 

3. Now add mayonnaise and paneer to the cucumber, mix well and decorate with grated cheddar cheese. 

4. Serve with the bread. 



8. sweet and sour cucumber salad. 



Ingredient :


1. Chopped oranges 1/2 cup, 

2. Pomegranate 1/2 cup, 

3. Diced cucumber 1 cup,

4. Sliced onion 1/4 cup, 

5. Boiled sweet corn 1/4 cup, 

6. Lemon juice 1tbsp,

7. Honey 1/4 tsp, 

8. Chopped green chillies 1tsp,

9. Roasted sesame seeds 1/4 tsp, 

10. Salt as per taste. 


preparation :


taste.1.Dry roast sesame seeds in a pan and keep aside. 

2. In a pan boil sweet corn till they cook. 

3. In a bowl take chopped oranges, cucumber, onion and boiled sweet corn. Then add salt, lemon juice and honey and give a good mix.

1. Diced cucumber 1cup, 

2. Diced onion 1/4 cup, 

3. Diced carrot 1/4 cup, 

4. Mint leaves 1/4 cup, 

5. Coriander leaves, 

6. Roasted chickpeas, 

7. Garlic cloves 2 

8. Salt to taste 

9. Green chilli 2,

10. Lemon 1 full. 


preparation :


1. In a grinder make a fine powder of roasted chickpeas and keep it aside in a bowl. 


2. In a grinder take mint leaves, coriander leaves, garlic,  and green chilli and make a fine paste. Do not add water. 


3. In a bowl take a diced cucumber, onion and carrot, add salt and mint paste, squeeze lemon and give a good mix.

Ingredient :


1. Diced cucumber 1cup,

2. Diced onion 1/4 cup, 

3. Diced tomatoes 1/4 cup, 

4. Diced bell paper 1/2 cup, 

5. Boiled potato cubes 1/4 cup, 

6. Lettuce leaves 

7. Mayonnaise 1/2 cup, 

8. Garlic cloves 3(grated garlic),

9. Cream cheese (optional),

10. Salt, 

11. Oregano 1/4 tsp, 

12. Chilli flakes 1/4 tsp, 


preparation :


1. In a bowl take mayonnaise and cream cheese, then add salt, oregano,  chilli flakes and grated garlic and mix it well. Keep aside. 

2. In another bowl take a diced cucumber, onion, tomatoes,  bell paper and boiled potato (cut into cubes).

3. Now add the mayonnaise mixture to the salad and mix well. 

4. Decorate with lettuce leaves and serve.
