Cabbage Manchurian
Ingredients for Manchurian
1. Finley chopped Cabbage 1 cup,
2. Shredded Carrots 1/2 cup,
3. Salt
4. Refined flour 1tbsp,
5. corn flour ½ cup,
6. Chilli flakes 1tsp,
7. black pepper powder a pinch,
8. Oil for deep frying,
9. water as required.
Method
1. Take fine chopped cabbage and carrot into a large bowl, rinse them well with water, and keep them in the sieve to drain off all water.
2. Take another bowl and add refined flour & corn flour along with salt, black pepper powder and chilli flakes.
3. Now add cabbage and carrots & toss well, add water if required to make a thick mixture so could shape them like a manchurian.
4. Fry these in Manchurian in hot oil until light golden brown, then transfer into a sieve and let them rest for a few minutes,
Ingredients for Sauce
1. oil 2 tbsp,
2. onion 1/2 cup chopped,
3. ginger 1 tbsp chopped,
4. garlic 2 tbsp chopped,
5. green chilli 1-2 chopped,
6. Capsicum For Fof 1/4 cup finely chopped,
7. Spring Onion bulbs 2 Tbsp Chopped,
8. Coriander Stem 1/2 Tbsp Chopped,
9. Soy Sauce 2 Tsp,
10. Green Chilli sauce 1tbsp
11. Ketchup 1 Tbsp,
12. Red Chilli Sauce 1 Tbsp,
13. Corn Flour 2 Tbsp,
14. White Pepper Powder 1/4tsp,
15. Pinch Salt To Taste,
16. Water As Required,
17. Spring Onion Green A Handful Chopped.
Method:
1. Preheat the deep pan and then add oil for deep frying.
2. Add onion, ginger, garlic and green chillies, stir well and cook over high flame for 1-2 minutes.
3. Further add capsicum, spring onion bulbs, coriander, soy sauce, green chilli sauce, ketchup, red chilli sauce, white pepper powder and salt, stir it then add water as required to make a sauce. Bring the sauce to a boil.
4. In a separate bowl take corn flour and water, mix well to make a slurry and add it to the sauce gradually while stirring it continuously, this will thicken the sauce.
5. Further add the fried cabbage and carrot manchurian along with fresh spring onion greens, lower the flame and mix well, you don't have to cook at this stage.
6. Then sprinkle some spring onion green and sesame seeds. Your cabbage Manchurian is ready.
