      1. Dhokla. 


Ingredients

For Dhokla Batter:


1. Gram flour 1 1/2 cup, 

2. Salt 1/2 tsp, 

3. Sugar 1/2 tsp, 

4. Turmeric powder- 1/2 tsp, 

5. Eno fruit salt - 1 tsp, 

6. Water as required. 


For Dhokla syrup


1. Oil - 1 tsp, 

2. Mustard seeds- 1/2 tsp, 

3. Slit Green chillies 5 no, 

4. Curry Leaves, 

5. Water 1/2 cup, 

6. Salt - 1/2 tsp, 

7. Sugar - 2 tsp, 

8. Coriander leaves chopped, 

9. Juice of 1/2 lemon, 


Method 


1. In a bowl, add the gram flour/besan, add sugar, salt, and turmeric powder mix everything well. 


2. Add water and mix well Whisk everything, the batter should be of flowing consistency and not very thick.


3. Rest the batter for about 10 mins. 


4. Grease a cake tin with some oil. 


4. Preheat a pressure cooker/ pot with some water for 5 minutes. Let the water come to a boil. 


5. Just before pouring the batter into the cake tin, add eno fruit salt and mix it gently Pour the batter immediately into the cake tin. 


6.  Place the cake tin on the stand in the pot. 


7. Close and steam cook the dhokla for about 25 minutes on medium-low flame. 


8. Check if it is fully cooked.


9. Remove the tin and let it cool down. 


10. Heat another pan to make syrup. Add some oil, add mustard seeds and let it splutter. 


11. Add green chillies, and curry leaves, then pour water, and add salt and sugar. 


12. Bring it to a boil and turn off the flame Add lemon juice, and coriander leaves and stir well. 


13. Check the dhokla and let it come to room temperature and then cut it into squares. 


14. Pour the syrup on the dhokla and let the dhokla soak in the syrup. 


15. Finally garnish it with grated coconut and coriander leaves. 


16. The dhokla is ready to be served.

6. Eno fruit salt - 2 tsp nearly packets, 

7. Water as required. 


For Dhokla syrup


1. Oil - 1 tsp, 

2. Mustard seeds- 1/2 tsp, 

3. Slit Green chillies 5 no, 

4. Curry Leaves, 

5. Water 1/2 cup, 

6. Salt - 1/2 tsp, 

7. Sugar - 2 tsp, 

8. Coriander leaves chopped, 

9. Juice of 1/2 lemon, 


Method

8. Check if it is fully cooked.


9. Remove the tin and let it cool down. 


10. Heat another pan to make syrup. Add some oil, add mustard seeds and let it splutter. 


11. Add green chillies, and curry leaves, then pour water, and add salt and sugar. 


12. Bring it to a boil and turn off the flame Add lemon juice, and coriander leaves and stir well. 


13. Check the dhokla and let it come to room temperature and then cut it into squares.
