Ingredients
1. Black gram/ black lentil/ black urad dal 1 cup,
2. Rajama 1/4 cup, soaked overnight,
3. Finley Chopped onion 2 cups,
4. Finley Chopped tomatoes 2 cups,
5. Ginger garlic paste 2 tbsp, use fresh paste,
6. Finley chopped coriander 1/4 cup,
7. Fresh cream 1 + 1/2 cup, can use amul cream,
8. Ghee 1 cup,
9. Cloves 4-5,
10. Black paper seeds 5-6,
11. Bay leaves 2,
12. Cinnamon 2-inch,
13. cardamom 1,
14. Kasuri Methi,
15. Turmeric powder 1/4 tsp,
16. Red chilli powder, use Kashmir lal for best results.
17. Charcoal smoke.
Method
1. Soak Rajama for 5 hours.
2. Clean and wash black gram/black urad dal and put it in a pressure cooker along with 1/4
cup ghee, 1/4 cup chopped onion, 1/4 cup chopped tomatoes, cloves, and black paper
seeds.5-6, bay leaves 2, cinnamon 2-inch, cardamom 1, salt and water 6 cups. Wait for 7-8
whistles or till the dal is cooked completely.
3. Cooking dal is an important step in the entire recipe so the dal should be mashy.
4. Meanwhile take a saucepan and add ghee, let it melt and then add chopped onion.
5. Fry the onion to a golden brown then add chopped tomatoes to it and sauté.
6. Then add ginger garlic paste to it and fry for another few seconds and then add red chilli
powder, kasuri methi, fresh cream/Amul cream and stir for a few minutes till it leaves oil from
the sides.
7. Then pour cooked black gram/urad dal into it and let it cook. Till it slightly changes colour.
8. Add cream if required.
9. Give a smoke of charcoal to the dal. Burn charcoal on the burner and let it turn red now put
this charcoal in the bowl and carefully keep the charcoal bowl on top of the dal, it should not
sink in the dam, add a spoon of ghee to the charcoal and cover it immediately, for 15 min.
10. Garnish with coriander and cream. Serve with rice/ roti/bread/naan/kulcha along with
onion salad and lemon.
