Gobi/Cauliflower Manchurian is a famous snack available on almost every corner of India and is one of the top-loved snacks. Cauliflower is the main ingredient in Gobi Manchurian and corn flour is used for coating, but you can make Manchurian without corn flour by just substituting it with maida/all-purpose flour. To make Manchurian healthy you can bake or air-fry instead of deep frying and this recipe does not include Ajinomoto. Let's have a look at both fried and baked/air-fried versions of Gobi Manchurian which is also good for weight loss and tasty, easy and delicious street-style Gobi Manchurian.
1. Gobi Manchurian/ Crispy Cauliflower
Fried version
Ingredients for Manchurian :
1. Cauliflower 1,
2. water as required for rinsing,
3. Oil for deep frying
4. Refined flour/maida 1/2 cup,
5. corn flour ½ cup,
6. salt to taste,
7. Black pepper powder a pinch,
8. Kashmiri red chilli powder 1-tsp,
9. Red food colour, optional,
10. Sesame seeds 1/4 tsp,
11. water as required.
Method :
1 Cut the cauliflower medium-sized florets then transfer them into a large bowl, rinse them well with water, season with a pinch of salt, let the florets rest in salt water for 3-4 minutes and then discard the salt water & rinse them with fresh water.
2. Take Bowl and add equal amounts of refined flour/maida and corn flour along with salt, black pepper powder and Kashmir red chilli powder, red food colour, then gradually add water while whisking continuously.
3. Add the florets into the batter & mix well to coat them with the batter evenly.
4. Deep fry these coated florets in moderately hot oil until light golden brown, then transfer them into a sieve and let them rest for a few minutes, meanwhile prepare the sauce.
Ingredients for Sauce :
1. oil 2 tbsp,
2. onion 1/2 cup chopped,
3. ginger 1 tbsp chopped,
4. garlic 2 tbsp chopped,
5. green chilli 1-2 chopped,
6. Capsicum For Fof 1/4 cup chopped,
7. Spring Onion bulbs 2 Tbsp Chopped,
8. Coriander Stem 1/2 Tbsp Chopped,
9. Soy Sauce 2 Tsp,
10. Green Chilli sauce 1tbsp
11. Ketchup 1 Tbsp,
12. Red Chilli Sauce 1 Tbsp,
13. Corn Flour 2 Tbsp,
14. White Pepper Powder 1/4tsp,
15. Pinch Salt To Taste,
16. Water As Required,
17. Spring Onion Green A Handful Chopped.
Method :
1. Preheat the wok or use the deep pan and then add oil,
2. Add onion, ginger, garlic and green chillies, stir well and cook over high flame for 1-2 minutes.
3. Then add capsicum, spring onion bulbs, coriander, soy sauce, green chilli sauce, ketchup, red chilli sauce, white pepper powder and salt, stir it then add water as required to make a sauce. Bring the sauce to a boil.
4. In a separate bowl take corn flour and water, mix well to make a slurry and add it to the sauce gradually while stirring it continuously, this will thicken the sauce.
5. Further add the fried cauliflower along with fresh coriander, and spring onion greens, lower the flame and mix well, you don't have to cook at this stage.
6. Garnish with some spring onion green and sesame seeds. Your gobi Manchurian is ready.
2. Baked/ Air fried Gobi Manchurian
Ingredients for baked Manchurian :
1. Cauliflower 1,
2. water as required for rinsing,
3. Pinch of salt,
4. Maida/all-purpose flour 1tsp,
5. Gram flour 1/2 tsp
6. Black pepper powder,
7. Kashmiri red chilli powder 1-tsp,
8. Salt to taste,
9. Sesame seeds,
10. water as required.
Method :
1 Cut the cauliflower medium-sized florets then transfer them into a large bowl, rinse them well with water, season with a pinch of salt, let the florets rest in salt water for 3-4 minutes and then discard the salt water & rinse them with fresh water.
2. To make a thin coating: Take maida and gram flour in a bowl along with salt, black pepper powder and Kashmir red chilli powder, then add the florets into it and toss to mix well.
4. Bake these coated florets in the oven or air-fry these with little oil. Once ready remove and keep aside.
Ingredients for Sauce :

5. green chilli 1-2 chopped,

15. Water As Required,
16. Spring Onion Green A Handful Chopped.
Method :
