2. Palak, Methi mathari spinach fenugreek chips
Ingredients:
1. 1 judi each of spinach and fenugreek,
2. 2 cups of maida/ all-purpose flour, 1/4 cup of semolina,
3. 1 teaspoon turmeric powder,
4. chilli powder 1tsp,
5. salt,
6. Pinch of asafoetida /hung,
6. Ajwain/Carom seeds and fennel powder,
7. 2 teaspoons of coriander-cumin powder,
8. 1 teaspoon of ginger-garlic paste optional,
9. 2 chillies,
10. 1 tsp oil,
11. Oil to deep fry.
Method :
1. Wash and clean Spinach and fenugreek leaves and finely chop p and keep them aside.
2. Make a fine paste of ginger, garlic and chillies with a pinch of salt in a grinder.
3. Take maida and semolina in a big bowl to make the dough, add turmeric powder, salt, ajwain, cumin coriander powder, and asafoetida to it.
4. Take a small pan and preheat 1 tsp oil now add this hot oil to maida.
5. Then add ginger-garlic paste and methi palak leaves. And mix everything without adding water.
5. Gradually add water and make a tight dough.
6. Mix the dough for 5 minutes and make dough soft, cover and keep this dough aside for 1/2 hour to rest.
7. Take the dough and roll small flat puris or give different shapes if you like.
8. Fry these puris in hot oil and take them out when golden brown.
9. Cover when completely cool.
