Omelette is an all-time favourite and evergreen dish for everyone. Even a simple omelette tastes best but we need variation in almost everything. Let's have a look at a few new and different types of omelette varieties.

1. Gravy omelette street style



Ingredients


1. Eggs 3, 

2. Boiled egg 1

3. Finely chopped onion 1 cup, (half for omelette and half for gravy)

4. Finely chopped tomatoes 1 cup, (half for omelette and half for gravy)

5. Garlic and ginger paste 1tbsp,

6. Coriander leaves finely chopped 1/4 cup,

7. oil 5-6tbsp,

8. Kashmiri red chilli powder 1/2tbsp,

9. Chat masala,

10. Kasuri Methi 1/2tbsp,

11. Rock salt as per taste,

12. 1/4 cup warm water, 

13. Pinch of black paper powder, 

14. Cheese cube 1 for garnishing. 


Gravy Preparation :


1. Add 2 tsp oil to the preheated pan.

2. Now add finely chopped onion 1/2 cup and fry till golden brown.

3. Once the onion is golden brown add finely chopped tomatoes 1/2 cup and fry till leaves oil from the sides.

4. Then it's time to add ginger and garlic paste. let it fry till everything mix well.

5. At last add Kashmiri red chilli, chat masala, Kasuri Methi, rock salt and fry.

6. Add warm water, cover and let it cook for 10 seconds. This gravy should be thick

7. Keep the pan aside and let it cool down.


Omelette preparation :


1. In a large bowl beat 3 eggs add salt and black paper then add finely chopped coriander leaves, red chilli flakes, finely chopped onion and tomatoes. Whisk all together and keep ready. 

2. In a pan heat 3 tbsp oil, once heated properly add the egg mixture and make an omelette. 

3. Take out the omelette on a plate and spread thick gravy on the omelette, and grate boiled egg, and cheese on top of it.

4. Serve with ketchup. 



2. Fried Omelette Roll. 



Ingredients 


1. Eggs 3 no, 

2. Oil 2 tbsp for an omelette and a pan full of oil for deep frying, 

3. Pizza sauce 1tbsp,

4. Cheese slices, 

5. All-purpose flour 1 cup, 

6. Salt, 

7. Black paper, 

8. Oregano 1tsp 

9. Chilli flakes 1 tsp, 

10. Breadcrumbs/ cornflakes ( crushed)1/2 cup,

11. Water, 

12. Ketchup/ mayonnaise/ cheese dip


Preparation 


1. Preheat the oil to deep fry. 

2. In a bowl beat 3 eggs and add salt, paper, 1/2 tsp oregano, and 1/2 tsp chilli flakes whisk it well. 

3. Prepare the pan (use a small pan) for an omelette, add 2 tbsp of oil once it's hot add the egg mixture and make a fluffy omelette. 

4. Take out the omelette on the plate and let it cool down. 

5. Once the omelette is ready spread the pizza sauce,  then roll the egg and cut it into equal pieces, and keep it in the fridge for 10 minutes. 

6. In a bowl take all-purpose flour and add salt, black paper, oregano and chilli flakes. Add water accordingly. The batter should be silky and not so thick. 

7. Keep the breadcrumbs ready or roughly grind the cornflakes in a grinder. 

8. Take out the omelette from the fridge and dip it into the all-purpose flour, then roll it into the breadcrumb/ cornflakes. 

9. Fry these rolls in Preheated oil till golden brown. 

10. Serve with ketchup/ mayonnaise/ cheese dip. 



3. Paneer Layered omelette. 




Ingredients for layered paneer/ tofu


1. Paneer/ tofu 200gm,

2. Curd 1 cup,

3. Red chilli powder, 

4. chat masala/ dry mango powder, 

5. Garam masala, 

6. Fresh ginger, garlic paste, 

7. Turmeric powder, 

8. Butter 1tsp,

9. Salt as per taste. 


Preparation


1. Cut the paneer/ tofu into a small square. Keep it aside. 

2. In a bowl take curd, red chilli powder, chat masala, garam masala, ginger garlic paste, turmeric powder, and salt then whisk it together and add paneer. 

3. Keep this Paneer marination in the fridge for 15 minutes. 

4. Take a pan and add butter then add marinated paneer. Let this fry for another few minutes till it's golden brown. 

5. Do not overcook the paneer. 

6. Keep it aside and make omelettes for layering. 


Ingredients for omelette


1. Eggs 4 no, 

2. Oil 4 tsp, 

3. Salt, 

4. Black paper, 

5. Finley chopped onion 1/2 cup, 

6. Finley chopped tomatoes 1/4 cup, 

7. Green chillies 3 no finely chopped, 

8. Chat masala 1/2tsp,

9. Coriander leaves finely chopped, 

10. Grated garlic 1tsp.


Preparation 


1. In a big bowl beat 4 eggs along with all the above ingredients which are 

Salt 

Black paper 

Onion 

Tomatoes 

Green chill

Chat masala 

Coriander 

Garlic 

Whisk everything for 10 sec

2. Preheat the pan, add oil once it is hot pour one cup of the egg mixture and fry both sides till light brown. Make 4 separate omelettes. 

3. Grease the pan with a spoonful of butter and then layer the omelette and paneer alternatively. 

4. Turn off the flame and cut it into triangles and serve. 






4. Spinach dip omelette. 



Ingredients for dip


1. Finley chopped spinach 1cup,

2. Fresh thick Amul cream 2tbsp (home-made cream), 

3. Butter 2tbsp, 

4. Garlic paste 1tsp,

5. Finely chopped onion 1/2 cup, 

6. Chilli flakes 1/2 tsp (or use as per your taste),

7. Salt, 

8. Oregano 1/4 tsp, 

9. Cheese 1/4 cup, 

10. Mayonnaise 2 tbsp.



Preparation 


1. Wash and dry the spinach, finely chop and keep it aside. 

2. Preheat the pan, add butter to it then add onion. Fry till it turns golden brown. 

3. Add garlic paste to the golden onion and fry it for a few more seconds. 

4. Then add spinach and salt and let it cook for a few minutes. Keep checking in between. Do not cover it with a lid. 

5. Once the spinach is cooked add cream, salt, chilli flakes and oregano. Keep on flame for a few more minutes. 

6. Then add cheese and mayonnaise, mix well and turn the flame off. Keep it aside. 


Ingredients for an omelette 


1. Eggs 2 no

2. Finely chopped onion and tomatoes 1cup together, 

3. Salt as per taste,

4. oil/butter 1tbsp,

5. Green chillies finely chopped 1/4tsp, 

6. Black paper,

7. Basil leaves/ coriander leaves for decoration.


Preparation


1. In a bowl beat 2 eggs along with salt and black paper, then add finely chopped green chillies,  onion and tomatoes, whisk it well and keep aside. 

2. Preheat the pan, then add oil/ butter to it once the oil is hot pour the egg mixture and let it fry from both sides. 

3. Take out the omelette from the pan on the serving plate.

4. Spread the spinach dip over it and fold or serve a spinach dip in a bowl as a side dip. decorate with basil leaves/ coriander leaves.

  

  




5. Cheesy egg omelette. 



Ingredients


1. Eggs 4,

2. Chopped onion 1/4 cup

3. Chopped tomatoes 1/4 cup,

4. Oregano, 

5. Cheese slice 

6. Cheddar Cheese, 

7. Mozzarella cheese, 

8. Mayonnaise, 

9. Ketchup, 

10. Cheese spread. 


Preparation 


1. In a bowl beat 4 eggs along with salt and paper and then add onion, tomato and oregano and keep this batter aside. 

2. In another bowl make the dip by adding 3 tbsp of mayonnaise, 1 tbsp of ketchup and 1/2 of oregano and keep aside. 

3. Preheat the pan, add oil and then pour half of the egg batter into it and slow down the flame. (keep half for the top layer) 

4. Take cheese slices and arrange to cover the entire omelette. On this put some mozzarella cheese and cheddar cheese. 

5. On this cheese layer pour half of the egg batter we save for the top layer, cover for a few seconds and flip the omelette and fry both sides light brown. 

6. Serve with mayonnaise dip.
