 6. Mushroom Soup

Ingredients: 

1. 50gms (1.75 oz) bottle gourd; 

2. 20gms (0.70 oz) chopped  mushroom; 

3. 10gms (0.35 oz) oil; 

4. 5gms (0.18 oz) of each cumin and coriander   powder; 

5. 2 1/2 gms (0.72 oz) turmeric powder; 

6. 21/2gms (0.72 oz) black pepper powder; 

7. 5 gms (0.18 oz) chopped onion; 

8. 20gms (0.70 oz) lemon 

9. 5gms (0.18 oz) jaggery or brown sugar; 

10. salt as per taste; 

11. 10gms (0.35 chopped coriander leaves; 

12. 20gms (0.70 oz) diet Rusk (4 pieces).

Method: 

1 Clean, boil the chopped mushroom and keep it aside. 


2. Steam or pressure cook chopped bottle gourd with sufficient water (1000ml), salt, turmeric and jaggery. 


3. When done, strain the water and keep it aside. 


4. Heat oil and fry the onions. Add cumin and coriander powder. 


5. Then add the strained water and allow it to boil. 


6. Add the mushroom pieces and black pepper and let it cook. 


7. Add the lemon juice and coriander leaves. 


8. Now to the prepared soup, mix a little bit of the mashed and strained bottle gourd pulp. 


9. Mix thoroughly and serve hot with diet Rusk.
