1. Potato onion salad


Ingredients 


Boiled potatoes 1 cup,


Chopped onion 1/4 cup,


Cucumber 1/4 cup,


Corn 1/4 cup,


Mint leaves 5-6,


Tamarind paste 1 tsp,


Roasted Peanuts 1 tbs,




Method


Soak tamarind for a while, remove seeds and make a fine paste.


Chop boiled potatoes into small cubes and keep them in a bowl then add chopped onion, cucumber and corn.


Season with salt, garnish with peanut, mint leaves and tamarind paste and serve.




2. Peanut cucumber salad 


Ingredients 


Roasted Peanuts 1/4 cup,


Cucumber  1 and 1/2 cups,


Carrot 1/2 cup,


Iceberg lettuce 100gm,


Yoghurt 1/4 cup,


Chopped onion 1/4 cup,


Sesame seeds /2 tsp,


2 Green chillies chopped,


Salt as per taste.





Method


Dry roast peanuts, coarse grind.

Scrape cucumbers and keep them in a big bowl. 


Scrape carrots and add to cucumber.


Add chopped onion and yoghurt and mix well.


Dress the salad in salt, and sesame seeds and mix well.


Garnish with roasted peanuts, green chillies and iceberg lettuce.


  


3. Fusilli salad


Ingredients 


Cooked  fusilli 1 cup,


Shredded carrots 1/2 cup,


Bell pepper 1/2 cup,


Tofu 1/4 cup,


Cherry tomatoes 1/4 cup,


Beetroot (chopped) 1 cup,


Parsley chopped 1 tbsp,


Garlic cloves  2-3,


Mayonnaise 2 tbsp,


Cream cheese 3 tbs,


Cheddar cheese 1/4 cup,


A pinch of Salt,



Method 


Beetroot paste- Peel and boil the beetroot in the water and let it cook completely, then add garlic cloves, salt and 1 tbsp of cream cheese to make a fine paste. Add chopped parsley and keep aside.


In a bowl take cooked fusilli, add bell pepper, shredded carrots, chopped tofu, and cherry tomatoes and season with salt.


Pour beetroot paste mayonnaise And give a good mix.


Garnish with Cheddar cheese and enjoy.



4. Chicken chickpeas salad.


Ingredients 


Chicken breast,


Chopped tomatoes 1/2 cup,


Zucchini 1/4 cup,


Canned chickpeas,


Snape beans 10-12,


Bell pepper 1/4 cup 


Red onion slices 1/4 cup,


Basil leaves,


Paprika  1/8 tsp, (substitute with chilli flakes),


Olive oil 2 tbsp,


Butter 1 tbsp,


Fresh Orange juice 1/4 cup,


Lemon juice 1 tsp,


Garlic cloves 1-2,



Method


Boil water and add salt. Now dip snap beans in the boiling water and leave for a while. Take it out and let it cool.


Season chicken breast with salt, minced garlic, and paprika powder(or chilli flakes).


Grease the pan with butter and add seasoned chicken breast, grill both sides and add more butter if needed. 


Once the chicken is cooked, chop it into small cubes, keep it in a bowl and pour in orange juice.


Add canned chickpeas to the bowl along with chopped red onion, bell pepper,  tomato zucchini, cooked snap beans and cooked chickpeas, and mix well.


Season with salt, lemon juice and olive oil.


Now garnish chicken breast and serve.



5.  Quinoa mango salad.


Ingredients

Quinoa 1/4 cup, 

Baby Spinach 10-12 no,

Canned Red Bean half, 

Avocado 1/2 cup, 

Cherry Tomatoes  1/2 cup, 

mango 1/2 cup,

lime juice, 

Salt as per taste,

Chia seed soaked 1tsp, 

Blue cheese, 

Parmesan cheese


Method:


Soak chia seeds 

Dry roast quinoa for a while,  add double the water, cover and let it cook. 

Meanwhile, peel and chop the avocado. 

Cut mango into pieces. 

Once the quinoa is cooked put it in a big bowl,  add red beans, chia seeds and 

Cherry tomatoes and give a mix. 

Now add avocado, cooked quinoa, baby spinach,  salt and lemon juice and give a good toss. 


Finally, add Mango cubes,  blue cheese and parmesan cheese and the salad is ready to eat.
