                           Stuffed eggs



Ingredients:


1.  1 finely chopped onion,

2.  4 eggs, 

3.  3 finely chopped green chillies, 

4.  1/2 spoon garam masala, 

5.  1 carrot (grated),

6.  Chopped coriander, 

7.  Salt, 

8.  2 spoons of ghee/butter, 

9.  1/4 spoon turmeric powder.

10.  Salad leaves for decoration (optional)


Preparation :

1. Hard boil the eggs.

2. Keep boiled eggs in chilled water.

3. Peel off the eggs, cut them in half and remove the egg yolks. Keep the white eggs aside.

4. In a pan, heat butter then add finely chopped onion and fry it till golden brown.

5. Once the onion is golden brown, add chopped green chillies, coriander leaves (keep some for decoration), salt to taste, and turmeric powder.

Now add egg yolks, mash and mix it all.

6. Let the mixture cool down completely.

7. Now stuff the yolk mixture into boiled white eggs. 

8. Serve on salad leaves.

9. Garnish with coriander/cilantro leaves.
