Ingredients:


- 500 grams of fish (preferably pomfret, kingfish, or any firm-fleshed fish)

- 1 cup grated coconut

- 1 onion, finely chopped

- 2 tomatoes, chopped

- 1 tablespoon Malvani masala (or use a mix of garam masala, coriander, cumin, turmeric, red chilli powder)

- 1 teaspoon ginger-garlic paste

- 2-3 kokum petals (or tamarind pulp)

- 1 sprig of curry leaves

- 2 tablespoons oil

- Salt to taste

- Fresh coriander leaves for garnish


Method:


1. Make a fine paste of grated coconut, Malvani masala (or spice mix), and water in a blender. Keep it aside.

2. Heat oil in a pan. Add chopped onions and sauté until golden brown.

3. Add ginger-garlic paste and cook for a minute.

4. Add chopped tomatoes and cook until they turn soft.

5. Add the coconut-spice paste and cook for a few minutes until the oil separates.

6. Add kokum petals (or tamarind pulp), curry leaves, and salt. Mix well.

7. Add fish pieces gently into the gravy and coat them with the masala.

8. Add water if required for desired consistency, cover and cook until the fish is cooked through.

Malvani Chicken Curry


Ingredients:


- 500 grams chicken pieces

- 1 cup grated coconut

- 1 onion, finely chopped

- 2 tomatoes, chopped

- 1 tablespoon Malvani masala (or spice mix)

- 1 teaspoon ginger-garlic paste

- 2-3 green chillies, slit

- 1-inch cinnamon stick

- 4-5 cloves

- 1 tablespoon oil

- Salt to taste

- Fresh coriander leaves for garnish


Method:


1. Make a paste of grated coconut, Malvani masala, and water in a blender. Keep it aside.

2. Heat oil in a pan. Add cinnamon, cloves, and chopped onions. Sauté until onions turn golden brown.

3. Add ginger-garlic paste and slit green chillies. Cook for a minute.

4. Add chopped tomatoes and cook until they become mushy.

5. Add the coconut-spice paste and cook until the oil separates.

Malvani Fish Curry


 Ingredients:

- 500g fish fillets (pomfret)

- 1 cup grated coconut

- 1 onion, finely chopped

- 2 tomatoes, chopped

- 2-3 green chillies, slit lengthwise

- 1-inch ginger, grated

- 4-5 garlic cloves, minced

- 1 tsp Malvani masala

- 1/2 tsp turmeric powder

- 1 tsp red chilli powder

- Tamarind pulp (lemon-sized ball soaked in water)

- Salt to taste

- Fresh coriander leaves for garnish

- 2-3 tbsp oil


 Method:

1. Grind grated coconut, ginger, garlic, turmeric powder, red chilli powder, and Malvani masala into a fine paste. Keep it aside.

2. Heat oil in a pan, add chopped onions and sauté until translucent.

3. Add the ground paste and sauté for a few minutes until the raw smell disappears.

4. Add chopped tomatoes and cook until they soften.

5. Pour water as needed to get the desired curry consistency.

6. Add slit green chillies, tamarind pulp, and salt. Bring it to a boil.

7. Gently slide in the fish fillets and let it simmer for 8-10 minutes or until the fish is cooked through.

8. Garnish with chopped coriander leaves and serve hot with steamed rice.


Malvani Fried Fish (Malvani Fish Fry)


 Ingredients:

- 500g fish slices (pomfret or kingfish)

- 2 tbsp Malvani masala

- 1 tsp red chilli powder

- 1/2 tsp turmeric powder

- Salt to taste

- 2-3 tbsp oil for frying

- Lemon wedges for garnish


 Method:

1. Clean and pat dry the fish slices.

2. In a bowl, mix Malvani masala, red chilli powder, turmeric powder, and salt.

3. Apply this spice mix generously on both sides of the fish slices and let them marinate for 20-30 minutes.

4. Heat oil in a pan, place the marinated fish slices and fry until golden brown and crispy on both sides.

5. Remove from oil, drain excess oil on a paper towel, and serve hot with lemon wedges.


 Malvani Fish Curry with Coconut Milk


 Ingredients:

- 500g fish fillets (surmai or pomfret)

- 1 cup coconut milk

- 2 onions, finely chopped

- 2 tomatoes, chopped

- 2-3 green chillies, slit lengthwise

- 1-inch ginger, grated

- 4-5 garlic cloves, minced

- 1 tsp Malvani masala

- 1/2 tsp turmeric powder

- 1 tsp red chilli powder

- Tamarind pulp (lemon-sized ball soaked in water)

- Salt to taste

- Fresh coriander leaves for garnish

- 2-3 tbsp oil


 Method:

1. Follow the same procedure as the basic Malvani Fish Curry until step 5 in the previous recipe.

2. Instead of adding water, pour coconut milk into the curry and continue with the rest of the steps.

3. Let it simmer for a few more minutes after adding fish fillets until they're cooked.

4. Garnish with chopped coriander leaves and serve with rice or Malvani bhakri.


Malvani Fish Fry with Coconut


 Ingredients:

- 500g fish slices (pomfret or kingfish)

- 1 cup grated coconut

- 2-3 garlic cloves

- 1-inch ginger

- 2-3 green chillies

- 1 tsp Malvani masala

- 1/2 tsp turmeric powder

- Salt to taste

- 2-3 tbsp oil for frying


 Method:

1. Grind grated coconut, garlic, ginger, green chillies, Malvani masala, turmeric powder, and salt into a fine paste. Marinate the fish slices with this paste for 30 minutes.
