1. Paneer Butter Masala.


Ingredients:


- 250g paneer (Indian cottage cheese), cubed

- 2 tablespoons butter

- 1 cup tomato puree

- 1/2 cup cream

- 1 onion, finely chopped

- 2 cloves garlic, minced

- 1-inch ginger, grated

- 1 teaspoon red chilli powder

- 1 teaspoon garam masala

- 1 teaspoon dried fenugreek leaves (Kasuri methi)

- Salt to taste

- Fresh coriander for garnish


Method:


1. Heat a tablespoon of butter in a pan and sauté paneer cubes until they turn golden. Set aside.

2. In the same pan, add the remaining butter. Sauté chopped onions until golden brown. Add garlic and ginger, and sauté for a minute.

3. Add tomato puree, red chilli powder, garam masala, and salt. Cook until the mixture thickens.

4. Stir in the cream and paneer cubes. Simmer for a few minutes.

5. Crush dried fenugreek leaves between palms and sprinkle over the dish.

6. Garnish with fresh coriander and serve hot with naan or rice.

2. Palak Paneer (Spinach and Paneer Curry)






Ingredients:


- 250g paneer, cubed

- 4 cups spinach leaves

- 1 onion, chopped

- 2 tomatoes, chopped

- 2 green chillies

- 1-inch ginger

- 1/4 cup cream

- 1 teaspoon cumin seeds

- 1 teaspoon turmeric powder

- 1 teaspoon garam masala

- Salt to taste


Method:


1. Blanch spinach in hot water for a minute, drain, and blend into a puree along with green chillies and ginger.

2. Heat oil in a pan, and add cumin seeds. Once they crackle, add chopped onions and sauté until golden.

3. Add chopped tomatoes, and turmeric powder, and cook until tomatoes are soft.

4. Pour in the spinach puree and cook for a few minutes. Add cream and garam masala.

5. Gently add paneer cubes and simmer for 5-7 minutes.

6. Serve hot with roti or rice.

3. Shahi Paneer





Ingredients:


- 250g paneer, cubed

- 1 onion, finely chopped

- 2 tomatoes, pureed

- 10-12 cashews, soaked and ground into a paste

- 2 tablespoons ghee

- 1 teaspoon cumin seeds

- 1 teaspoon red chilli powder

- 1/2 teaspoon turmeric powder

- 1/2 teaspoon garam masala

- 1/4 cup cream

- Salt to taste


Method:


1. Heat ghee in a pan, and add cumin seeds. Once they crackle, add chopped onions and sauté until golden.

2. Add tomato puree, red chilli powder, turmeric powder, and salt. Cook until oil separates.

3. Stir in the cashew paste and cook for a few minutes.

4. Add paneer cubes, garam masala, and cream. Simmer for 5-7 minutes.

5. Serve Shahi Paneer hot with naan or rice.

4. Kadai Paneer




Ingredients:

- 250g paneer, cubed

- 1 cup bell peppers (capsicum), sliced

- 1 onion, cubed

- 2 tomatoes, chopped

- 1 tablespoon ginger-garlic paste

- 2 green chillies, slit

- 1 teaspoon coriander powder

- 1 teaspoon cumin seeds

- 1/2 teaspoon red chilli powder

- 1/2 teaspoon garam masala

- Fresh coriander for garnish


Method:


1. Heat oil in a kadai or wok. Add cumin seeds and let them crackle.

2. Add ginger-garlic paste, onions, and sauté until golden brown.

3. Add chopped tomatoes, coriander powder, red chilli powder, and cook until tomatoes are soft.

4. Toss in sliced bell peppers and cook until they are slightly tender.

5. Add paneer cubes, and garam masala, and mix gently.

6. Garnish with fresh coriander and serve hot.

5. Matar Paneer (Peas and Paneer Curry)


Ingredients:


- 250g paneer, cubed

- 1 cup green peas

- 1 onion, finely chopped

- 2 tomatoes, pureed

- 1 teaspoon ginger-garlic paste

- 1/2 teaspoon turmeric powder

- 1 teaspoon cumin seeds

- 1 teaspoon coriander powder

- 1/2 teaspoon garam masala

- Fresh coriander for garnish


Method:


1. Heat oil in a pan, and add cumin seeds. Once they crackle, add chopped onions and sauté until golden.

2. Add ginger-garlic paste, turmeric powder, and coriander powder, and cook until the raw smell disappears.

3. Pour in tomato puree, add green peas, and cook until peas are tender.

4. Add paneer cubes, and garam masala, and simmer for a few minutes.

5. Garnish with coriander.
